Two most beautiful words in the English Language : "Summer Afternoon"


Sunlight beamed down from a clear blue sky and twinkled off a million dewdrops, giving a fresh, newly washed appearance to trees and grass around.

Lazing on this sunny afternoon, I have a plate of  watermelon in hand and I consider it as one of life's great pleasures on a hot summer afternoon...
Let me present Watermelon cheese salad this afternoon :)


Now, this salad is incredibly delicious and very unusual...;)

This salad is ultra simple. I cut up about half a small watermelon and toss it with a few things to bring out its flavor. A dash of vinegar balances the sweetness and makes the salad even juicier.

This salad is best made right before serving. Made just a few minutes before serving, the watermelon is crisp and fresh, and the cheese creamy and bright. The mint isn't just a garnish; its taste penetrates the watermelon quickly.

To me, this is up there as one of the ultimate expressions of summer. ENJOY!
